**JYOTI Natural Foods** was established in the USA in 1979 with a creative vision—to prepare, package, and supply high-quality, nutritious Indian meals to those already familiar with Indian cuisine, while also introducing authentic Indian flavors to new audiences. At that time, only a few Indian restaurants existed in major cities, and ready-made Indian food products or even basic ingredients were rarely available in supermarkets.
To make traditional Indian dishes more accessible, the company decided to offer shelf-stable canned foods through specialty stores and grocery markets. With a strong academic background in Nutrition, Jyoti developed wholesome vegetarian recipes using fresh ingredients, moderate amounts of fat and salt, and no preservatives. The goal was to maintain both authenticity and nutritional value.
A small cannery was set up to begin research and development, focusing on perfecting traditional homemade flavors in packaged form. Once several recipes were finalized, large-scale production began with the help of co-packers.
However, customer feedback revealed an unexpected issue—some products like *Dal Makhani* and *Punjabi Chhole* occasionally contained small stones. Although the co-packer used advanced destoning equipment, it did not completely solve the problem. Determined to maintain product quality, Vijai developed a simple yet highly effective cleaning technology that removed foreign particles such as stones, sand, glass, metal, twigs, and stems from beans.
This innovation strengthened the company’s commitment to delivering safe, authentic, and high-quality Indian foods to customers.
